

This recipe was inspired by a recipe my sister used to make in high school, I’ve just completely veganised it!
This is great as a snack or as part of a meal and best of all, it’s super simple to make.

Curried Grape & Tofu Wraps

Servings: 4-5 wraps.
INGREDIENTS
- 250g Firm Tofu, pressed then cut into 2cm cubes & sprinkled with Himalayan Salt
- 1/2 – 1 Brown onion, thinly sliced longways
- 2 Celery sticks, thinly sliced
- 1 handful Grapes, sliced into halves or quarters & seeded
- 8-10 Cos Lettuce leaves (or iceberg lettuce)
DRESSING:
- 1/3 cup unsweetened Coconut Yogurt (I use Coyo) or you can use any other vegan yogurt or mayo
- 1 tsp Curry powder
- 1 tsp Lemon juice (freshly squeezed)
- ¼ tsp Apple cider vinegar
- Pinch Himalayan salt
DIRECTIONS
1. Add all dressing ingredients to a small bowl and mix until well combined.
2. In a frying pan on high heat, fry tofu cubes, onion and celery in olive oil. Turn tofu cubes once the bottom side has turned golden. Once tofu is golden on two sides and onion has sautéed, take off heat.
3. Add tofu cubes, onion and celery to a medium-sized mixing bowl and let cool for 5 mins.
4. Add dressing and grapes to the tofu bowl and mix well until everything is covered in dressing.
5. Lay the lettuce leaves down (I used 2 leaves as 1 wrap) and scoop the mix into the lettuce leaves evenly.
