

These fritters are so simple and quick to make! They’re good for a snack or as a meal. And best of all, they’re vegan and gluten-free!
You can easily add and change the spices and herbs you want to create your desired flavour.

Zucchini & Carrot Fritters

Servings: 6 fritters.
INGREDIENTS
- 1/2 Zucchini, grated (about 1.5 cups)
- 1 large Carrot, grated (1 heaped cup)
- 3 tbsp Brown rice flour, or plain gluten-free flour
- 1/2 Red or Brown Onion OR 1 Spring Onion, chopped
- 1 tsp Himalayan salt
- 1/2 tsp Garlic powder
- 1/2 tsp Black Pepper, cracked
- 1 tsp Nutritional Yeast (optional)
- 1-2 tsp Water
- 1-2 tsp Olive Oil
- Extra Olive Oil, for frying
DIRECTIONS
1. Add all ingredients to a mixing bowl and mix until well combined with a moist and slightly sticky consistency. Add more water or flour as needed and extra spices to taste.
2. Heat olive oil in a large frying pan on high heat, then scoop 1/4 cup of mixture into the pan and flatten with a fork. Once the bottom side is firm and golden, flip it over and cook until the other side is golden too then take off heat.
3. Repeat step 2 until all the mixture is cooked.
Serve with freshly squeezed lemon juice, a leafy salad and vegan mayo or yogurt.
NOTES
- Add any other spices or herbs to your desired taste.
- If you grate the carrots and zucchini using a grater, it will be more watery so you won’t need as much water in the mix. If you grate them with a food processor grater, then you will need the amount of water listed.
