Servings: 6 fritters.

INGREDIENTS

  • 1/2 Zucchini, grated (about 1.5 cups)
  • 1 large Carrot, grated (1 heaped cup)
  • 3 tbsp Brown rice flour, or plain gluten-free flour
  • 1/2 Red or Brown Onion OR 1 Spring Onion, chopped
  • 1 tsp Himalayan salt
  • 1/2 tsp Garlic powder
  • 1/2 tsp Black Pepper, cracked
  • 1 tsp Nutritional Yeast (optional)
  • 1-2 tsp Water
  • 1-2 tsp Olive Oil
  • Extra Olive Oil, for frying

DIRECTIONS

1. Add all ingredients to a mixing bowl and mix until well combined with a moist and slightly sticky consistency. Add more water or flour as needed and extra spices to taste.

2. Heat olive oil in a large frying pan on high heat, then scoop 1/4 cup of mixture into the pan and flatten with a fork. Once the bottom side is firm and golden, flip it over and cook until the other side is golden too then take off heat.

3. Repeat step 2 until all the mixture is cooked.

Serve with freshly squeezed lemon juice, a leafy salad and vegan mayo or yogurt.

NOTES

  • Add any other spices or herbs to your desired taste.
  • If you grate the carrots and zucchini using a grater, it will be more watery so you won’t need as much water in the mix. If you grate them with a food processor grater, then you will need the amount of water listed.

Enjoy!
