Fresh Baked Beans

This Baked Beans recipe has always been a winner at my brunches! The flavour combination and the texture makes this a crowd pleaser.

INGREDIENTS

  • 1 Brown Onion, chopped
  • 1-2 Garlic cloves, crushed
  • 1/4 cup Vegetable Stock (optional)
  • 1 tsp Tamari
  • 1 tsp fresh Thyme leaves
  • 2 tsp fresh Parsley leaves, chopped
  • 1 cup Passata
  • 1/2 cup diced tinned Tomatoes
  • 1/2 -1 tsp Himalayan Salt
  • 1/2 tsp Smoked Paprika powder
  • 2 cups Kidney Beans (pre-cooked or tinned)
  • Pepper to taste

DIRECTIONS

1. In a cast iron pan on medium heat, sauté onion and garlic until golden.

2. Add vegetable stock, tamari, thyme & parsley and simmer for 2 mins.

3. Stir in passata, tinned tomatoes, salt & smoked paprika and simmer for another 5 mins.

4. Mix in kidney beans, turn heat to low, cover with a lid and simmer for 10-15 mins.

5. Add pepper and extra spices and herbs to taste.
