Simple Rosti / Hashbrown

These rosti’s are super simple to make and only require 3-4 ingredients! If you’re planning a big brunch, you can save time on the day by making these the night beforehand and storing the mix in the fridge.

Simple Rosti / Hashbrowns

INGREDIENTS

  • 8 medium Royal Blue Potatoes, washed & peeled 
  • 1 tsp Himalayan Salt
  •  1.5 tsp Olive Oil + extra for cooking
  •  1-2 tbsp Brown Rice Flour (optional) 

DIRECTIONS

1. Grate the potatoes then place in a steamer for 5 mins, until soft.

 2. In a bowl, mix the grated potatoes, salt, rice flour (optional) and olive oil until well combined. 

3. Heat olive oil in a frying pan on high heat, then add about  1/4 cup of the mixture in the pan, flattening with a spoon or fork to about 1-2cm high.

4. Fry for 5 mins on each side, until both sides are golden and crispy. Continue until all are cooked.
