Simple Vegan Pancakes

3 words: Simple Vegan Pancakes! And not only that, they only need 3 ingredients! I started making these years ago when I started to host brunches with loved ones – and ever since they’ve been a big hit! They’re completely refined sugar-free, gluten-free & guilt-free, making them a perfect recipe. Best of all you can be as creative as you want with toppings!

Simple Vegan Pancakes

INGREDIENTS

  • 2 ripe Bananas
  • 1-1.5 cups Plant Milk
  • 1.5 cups Brown Rice Flour (or a plain gluten-free replacement flour)

Coconut Oil or Olive Oil (for cooking)

Optional Extras:

  • Protein Powder
  • 1/4 cup Cacao Powder
  • 1/4 – 1/2 tsp Cinnamon Powder
  • 1/3 cup Choc bits
  • 1/3 cup Berries

Toppings:

  • Agave Syrup
  • Berries
  • Choc Bits & Melted Chocolate
  • Shredded Coconut
  • Banana slices
  • Vegan Whipped Cream and/or Ice-Cream

DIRECTIONS

1. Blend bananas and plant milk in a blender until smooth.

2. Pour into mixing bowl along with the brown rice flour and stir until well combined.

3. Add any optional extras to the mix, stirring well.

4. Heat coconut oil or olive oil in a frying pan on medium-high heat and scoop 1/4 cup of the mix into the pan, making a circular shape. Fry for about 3 mins on each side, or until firm and cooked on both sides.

5. Add toppings & serve fresh.
