Ultimate Scrambled Tofu

This is the ultimate Scrambled Tofu! The flavour is just perfect and it’s got extra nutrition with the veggies! This has always been a favourite at my brunches and lunches.

Ultimate Scrambled Tofu

INGREDIENTS

  • 500g Firm Tofu, liquid pressed
  • Olive oil for frying
  • 1 cup Button Mushrooms, sliced
  • 1 Celery Stick, chopped
  • 3/4 cup Carrots, diced
  • 1 Spring Onion, sliced
  • 1.5 tbsp Tamari
  • 1/4 cup Plant Milk
  • 1 tbsp Nutritional Yeast
  • 1 tbsp fresh Parsley (optional)
  • 1/4 tsp Turmeric powder
  • 2 handfuls Baby Spinach

DIRECTIONS

1. Crumble tofu with your fingers into a bowl. Sprinkle with Himalayan Salt.

2. Heat olive oil in a frying pan on high heat, then fry tofu until just golden.

3. Add mushrooms, celery, carrots, spring onions & tamari and fry for 3-5mins.

4. Stir through plant milk, nutritional yeast, parsley, turmeric and spinach and cook on low for 5 mins.

5. Add extra salt, tamari and/or herbs to taste.
