

This Potato Bake is cheezy, creamy and so delicious! It’s a perfect side to BBQ’s. And not only does it taste good, it’s also healthier for you than regular potato bake!
Cheezy Vegan Potato Bake

Makes: Approx 1 medium serving bowl.
INGREDIENTS
SAUCE:
- 2 medium-large Royal Blue or Creamy Potatoes, cubed
- 1/3 cup Coconut Cream
- 1/2 cup Plant Milk
- 1/3 cup Vegetable Stock
- 2 tbsp Nutritional Yeast
- 1/4 tsp Smoked Paprika powder
- 1/2 tsp Himalayan Salt
- Pinch of Garlic powder
FILLING:
- 4 medium-large Royal Blue or Creamy Potatoes, sliced
- 1 head of Broccoli, chopped
- 1 Brown Onion, sliced longways
DIRECTIONS
*Preheat oven to 220°C
- For the sauce, boil potatoes until soft.
- Add boiled potatoes & the rest of the sauce ingredients to a blender or food processor & blend until creamy/cheesy.
- For the filling, boil potatoes until soft and steam broccoli until soft.
- In a cast iron pan on medium heat, sauté onions.
- To assemble, coat the base of an oven safe dish with a thin layer of olive oil then lay potato slices down to make one layer. Lay onions & broccoli over then pour some sauce over top. Continue to layer more potato slices and sauce until all used, making sure the top layer is a layer of sauce.
- Sprinkle extra nutritional yeast or vegan cheese or top then place in the oven for 20-30mins, until the top is golden.
