Raw Vegan Choc Orange Slice

When I was young I loved jaffa’s and choc-orange ice-cream, so it was only a matter of time before I created a choc-orange recipe! This is slightly sweet, fresh, creamy & chocolatey. Even better, it’s raw vegan, refined sugar-free, gluten-free and packed full of nutritional goodness!

  • 4tbsp Cacao Powder
  • 1/2 tsp Himalayan Salt

CREAM ORANGE LAYER:

  • 1 cup raw Cashews, soaked for 12-16 hours
  • 4 Medjool Dates, pitted, sliced in half and soaked for 2 hours
  • 6 tbsp Coconut Cream
  • 1 tsp Coconut Oil
  • 2 tbsp Agave Syrup
  • 1/4 tsp Pure Vanilla Extract
  • 10-20 drops food grade Sweet Orange Essential Oil (or orange essence)

CHOCOLATE LAYER:

  • 4 tbsp Coconut Oil
  • 5-6 tbsp Agave Syrup
  • 4 tbsp Cacao Powder
  • 1/2 tsp Pure Vanilla Extract
  • 2-5 drops food grade Sweet Orange Essential Oil (or orange essence)

DIRECTIONS

* Make sure all nuts have been soaked in water for the recommended time and rinsed.

BASE LAYER

  1. In a food processor, blend nuts and dates for about 5 seconds until chopped.
  2. Add the rest of the base ingredients and mix until well combined.
  3. Scoop base into a lined metal baking dish, making sure to flatten it evenly.
  4. Place in freezer for 30mins to set.

CREAM LAYER

  1. In a food processor, blend cashews until finely chopped
  2. Add the rest of the cream layer ingredients and blend until completely smooth – this can take up to 5-10mins (on and off).
  3. Once completely smooth, scoop cream layer evenly over top of base then place in freezer for another 30mins – 1 hour to set.

CHOCOLATE LAYER

  1. Blend all chocolate layer ingredients together until smooth and creamy.
  2. Pour evenly over top of the slice and leave in freezer for 5 hours to completely set.

NOTES:

  • If you want a smooth glazed chocolate layer, melt the coconut oil before mixing.
  • This does melt slightly if left out too long, so keep in freezer until ready to serve.

Enjoy!
