Vegan Guilt-Free Choc Brownie

A vegan & gluten-free chocolate brownie? Of course it can be done! It’s amazing how chocolatey this tastes. Make sure you use a creamy & meltable vegan chocolate to get the best texture and flavour.

Vegan Guilt-Free Choc Brownie

Makes: Approx 10 slices.

INGREDIENTS

  • 1/2 cup Hazelnuts, soaked for 12hrs
  • 1/4 cup Walnuts, soaked for 12hrs
  • 2 cups Brown Rice Flour or plain gluten-free flour
  • 1/4 cup Coconut Flour
  • Pinch of Himalayan Salt
  • 1 tsp Baking powder
  • 3 tbsp Cacao powder
  • 3 tbsp Coconut Sugar
  • 1 tsp Coconut Oil
  • 100g vegan Dark Chocolate – I use Loving Earth or Pana
  • 3 tbsp Aquafaba
  • 1/2 tsp Vanilla extract
  • 1 tbsp Agave syrup
  • 1.25 – 1.5 cups filtered Water

DIRECTIONS

*Preheat oven to 180°C

  1. Mix brown rice flour, coconut flour, Himalayan salt, baking powder, cacao powder & coconut sugar in a mixing bowl.
  2. Chop hazelnuts & walnuts roughly.
  3. Melt the coconut oil & chocolate in a bain-marie until completely melted.
  4. Mix the aquafaba & vanilla extract to the melted chocolate and coconut oil and stir until well combined.
  5. Pour the melted chocolate mix & agave into the bowl of flours and mix well.
  6. Add the water, mixing until smooth and well combined.
  7. Add the chopped nuts and mix well.
  8. Pour the mix into a non-stick or lined pan evenly and bake in the oven for 25-35 mins, until just cooked through.

Let cool and serve with vegan whipped cream or vegan ice cream.
